Creamy Garlic Roasted Cauliflower Bake

1 large head of cauliflower, cut into florets

3 tablespoons olive oil

Salt and pepper, to taste

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

3 cloves garlic, minced

1/2 teaspoon dried thyme (or 1 teaspoon fresh thyme)

1/2 cup breadcrumbs (optional, for topping)

Fresh parsley, chopped, for garnish

Instructions
 

Preheat the Oven:

    Preheat your oven to 400°F (200°C).

      Roast the Cauliflower:

        In a large mixing bowl, combine the cauliflower florets with olive oil, salt, pepper, garlic powder, and smoked paprika. Toss until the florets are evenly coated. Spread the seasoned cauliflower on a baking sheet in a single layer and roast for 25-30 minutes, or until the florets are tender and golden, stirring halfway through.

          Prepare the Creamy Garlic Sauce:

            While the cauliflower roasts, in a saucepan over medium heat, pour in the heavy cream. Add the minced garlic and dried thyme, and bring it to a gentle simmer. Stir in half of the Parmesan cheese, mixing until melted and creamy. Season with salt and pepper to taste, then remove from heat.

              Combine with Roasted Cauliflower:

                Once the cauliflower is roasted, transfer it to a baking dish. Pour the creamy garlic sauce over the roasted cauliflower, followed by the remaining Parmesan cheese and shredded mozzarella. Toss gently to coat the florets with the sauce.

                  Optional Breadcrumb Topping:

                    If using, sprinkle the breadcrumbs evenly over the top of the cheese mixture for added texture.

                      Bake:
