Salt and pepper, to taste

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon red pepper flakes (optional)

1 cup heavy cream

1 cup chicken broth

1 teaspoon dried Italian herbs (basil, oregano, thyme)

4 cups fresh spinach

8 ounces pasta (fettuccine or penne works well)

1/2 cup grated Parmesan cheese

Zest of 1 lemon

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.

    Prepare the Chicken: While the pasta cooks, season both sides of the chicken breasts with salt and pepper. In a large skillet, heat the olive oil over medium heat. Add the chicken and sear for about 5-7 minutes per side, or until cooked through and golden brown. Remove from the skillet and let it rest for a few minutes before slicing into strips.

      Make the Sauce: In the same skillet, add minced garlic and red pepper flakes (if using). Sauté for about 30 seconds until fragrant. Pour in the heavy cream and chicken broth, stirring to combine.

        Add Herbs and Spinach: Sprinkle in the dried Italian herbs and bring the sauce to a simmer. Gradually fold in the spinach, letting it wilt into the sauce for about 2-3 minutes.

          Combine Pasta and Sauce: Return the sliced chicken to the skillet. Add the cooked pasta into the creamy sauce, tossing to coat thoroughly. If the sauce is too thick, gradually stir in reserved pasta water until you reach your desired consistency.

            Finish the Dish: Stir in the grated Parmesan cheese and lemon zest, mixing until the cheese is melted and the sauce is creamy. Taste and adjust seasoning with more salt and pepper if needed.
