Ingredients

2 large cucumbers, thinly sliced

1 cup plain Greek yogurt

2 tablespoons mayonnaise

1 tablespoon apple cider vinegar

2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)

1 garlic clove, minced

1 teaspoon sugar (optional)

Salt and black pepper to taste

1/4 cup red onion, thinly sliced (optional)

1 tablespoon fresh lemon juice

Fresh dill sprigs for garnish

Instructions

Prepare the Cucumbers: Start by washing your cucumbers thoroughly. Using a mandoline or a sharp knife, slice them thinly. Place the slices in a colander, sprinkle with salt, and let them sit for about 15 minutes to drain excess water. This helps keep the salad crisp.

Make the Dressing: In a medium-sized bowl, combine Greek yogurt, mayonnaise, apple cider vinegar, minced garlic, chopped dill, lemon juice, and sugar (if using). Whisk the mixture until smooth. Taste and adjust the seasoning with salt and black pepper as needed.

Combine Ingredients: After 15 minutes, rinse the cucumber slices under cold water to remove excess salt, then pat them dry with paper towels. In a large serving bowl, combine the cucumbers, red onion (if using), and the dressing. Toss gently until the cucumbers are well coated with the creamy dressing.

Chill the Salad: Cover the bowl with plastic wrap and refrigerate the salad for at least 30 minutes. This allows the flavors to meld together nicely.

Serve: Once chilled, give the salad a gentle toss. Garnish with fresh dill sprigs on top for an extra touch of flavor and presentation. Enjoy your creamy cucumber dill salad as a refreshing side dish!
