1 can (15 oz) chickpeas, rinsed and drained

2 tablespoons olive oil

3 cloves garlic, minced

1 small onion, finely chopped

1 cup cherry tomatoes, halved

1 bell pepper (red or yellow), diced

1 zucchini, diced

1 cup spinach, roughly chopped

1 cup heavy cream or coconut cream for a vegan option

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

Fresh parsley, chopped, for garnish

Grated Parmesan cheese (optional, for serving)

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the pasta and set aside.
