Creamy Chickpea Caesar Wraps

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

2 tablespoons lemon juice

1 teaspoon Dijon mustard

1 tablespoon Worcestershire sauce (or vegan alternative)

2 cloves garlic, minced

1/4 cup tahini

2 tablespoons nutritional yeast (optional)

Salt and pepper to taste

4 large whole wheat or spinach wraps

2 cups romaine lettuce, chopped

1/2 cup cherry tomatoes, halved

1/4 cup grated Parmesan cheese (or vegan cheese)

Fresh parsley or cilantro for garnish (optional)

Instructions
 

Prepare the Chickpeas: In a mixing bowl, mash the chickpeas lightly with a fork or potato masher, so they are broken but not completely pureed. Set aside.

    Make the Creamy Dressing: In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, Worcestershire sauce, garlic, tahini, and nutritional yeast (if using). Season with salt and pepper to taste.

      Combine: Pour the dressing over the mashed chickpeas and mix until the chickpeas are well-coated and the mixture is creamy. Taste and adjust seasoning as needed.

        Assemble the Wraps: Lay out the whole wheat or spinach wraps on a flat surface. Start by placing a generous amount of the chickpea mixture in the center of each wrap, leaving space on the edges for folding.

          Add Fresh Ingredients: Top the chickpea mixture with chopped romaine lettuce, halved cherry tomatoes, and a sprinkle of grated Parmesan cheese.
