Creamy Chicken Taco Skillet

1 lb (450 g) boneless, skinless chicken breasts, diced

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 packet taco seasoning (about 1 oz)

1 cup chicken broth

1 cup heavy cream

1 cup shredded cheddar cheese

½ cup sour cream

Salt and pepper to taste

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Heat the Oil: In a large skillet over medium heat, add the olive oil. Once the oil is hot, add the diced chicken and season with salt and pepper. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.

    Add the Vegetables: Once the chicken is cooked, add the diced onion, garlic, and red bell pepper to the skillet. Sauté for another 3-4 minutes, or until the vegetables are tender and the onion is translucent.

      Spice It Up: Stir in the black beans, corn, and taco seasoning. Pour in the chicken broth and bring to a simmer. Cook for about 2-3 minutes until everything is well combined.

        Make It Creamy: Reduce the heat to low and stir in the heavy cream and sour cream, mixing until the sauce is creamy and combined. Let it simmer for another 5 minutes, stirring occasionally.

          Add Cheese: Sprinkle the shredded cheddar cheese over the top and cover the skillet for a couple of minutes, allowing the cheese to melt.

            Serve: Once the cheese is melted, remove from heat. Garnish with fresh cilantro and serve with lime wedges on the side.
