Creamy Chicken Enchilada Skillet

1 lb (450g) boneless, skinless chicken breasts, diced

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 bell pepper (red or green), diced

1 cup corn kernels (fresh, frozen, or canned)

1 can (10 oz) enchilada sauce (red or green)

1 cup sour cream

1 teaspoon chili powder

1 teaspoon cumin

½ teaspoon paprika

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Slices of avocado (optional, for serving)

Tortilla chips (for serving)

Cook the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes. Remove the chicken and set aside.

    Sauté Vegetables: In the same skillet, add the diced onion, and bell pepper, and sauté for about 3-4 minutes until tender. Add the minced garlic and cook for an additional 1 minute until fragrant.

      Combine Ingredients: Return the cooked chicken to the skillet. Stir in the corn, enchilada sauce, sour cream, chili powder, cumin, and paprika. Mix well and let it simmer for about 5 minutes until everything is heated through.

        Add Cheeses: Reduce the heat to low and sprinkle both the cheddar and Monterey Jack cheese on top of the chicken mixture. Cover the skillet and let the cheese melt, about 3-5 minutes.

          Serve: Once the cheese is bubbly and melted, remove from heat. Garnish with fresh cilantro and add avocado slices if desired. Serve the creamy chicken enchilada skillet with tortilla chips for a delightful crunch.
