8 oz (225 g) pasta of your choice (penne or fusilli work great)

1 lb (450 g) boneless, skinless chicken breast, cut into bite-sized pieces

2 cups fresh spinach, rinsed and roughly chopped

1 cup cherry tomatoes, halved

3 cloves garlic, minced

1 medium onion, diced

1 cup heavy cream

1 cup chicken broth

1 tsp Italian seasoning

1/2 tsp red pepper flakes (optional)

1/2 cup grated Parmesan cheese

2 tbsp olive oil

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the rest and set aside.

    Sauté Chicken: In a large skillet, heat olive oil over medium-high heat. Add the diced chicken, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Cook Vegetables: In the same skillet, add the diced onion and sauté for about 2 minutes until translucent. Stir in the minced garlic and cook for another minute until fragrant.

        Add Tomatoes and Spinach: Add the cherry tomatoes to the skillet and cook for 2-3 minutes, until they start to soften. Then, add the chopped spinach and cook for an additional 2 minutes until wilted.

          Make the Sauce: Pour in the chicken broth and heavy cream. Add the Italian seasoning and red pepper flakes (if using) and stir to combine. Allow the sauce to simmer for about 3-4 minutes until it thickens slightly.

            Combine Chicken and Pasta: Return the cooked chicken to the skillet. Add the drained pasta, and toss everything together. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

              Finish with Parmesan: Stir in the grated Parmesan cheese until melted and well-incorporated. Check seasoning and adjust salt and pepper if needed.
