1 medium head of cauliflower (about 3-4 cups riced)

1 cup heavy cream

1 teaspoon garlic powder

1 teaspoon onion powder

1 cup shredded sharp cheddar cheese

½ cup grated Parmesan cheese

2 tablespoons butter

Salt and pepper to taste

Chopped parsley or chives for garnish

Prepare the Cauliflower: Start by removing the green leaves and stem from the cauliflower. Cut it into florets and place them in a food processor. Pulse until the florets resemble rice or couscous. If you don't have a food processor, you can use a box grater to rice the cauliflower.

    Sauté the Cauliflower: In a large skillet over medium heat, melt the butter. Add the riced cauliflower and sauté for about 5 minutes, stirring occasionally, until slightly softened.

      Add Seasonings: Sprinkle the garlic powder, onion powder, salt, and pepper over the cauliflower. Stir well to combine.

        Incorporate the Cream: Pour in the heavy cream, stirring constantly. Bring the mixture to a gentle simmer and allow it to cook for an additional 5-7 minutes, until the cauliflower is fully tender and has absorbed some of the cream.

          Cheesy Goodness: Reduce the heat to low and mix in the shredded cheddar cheese and grated Parmesan. Stir until the cheeses have melted and the mixture is creamy and well combined. Taste and adjust seasoning with more salt and pepper if needed.

            Serve: Remove from heat and let it rest for a few minutes. Garnish with chopped parsley or chives before serving.
