Creamy Cheddar Cauliflower Mash

Ingredients
  

1 large head of cauliflower, chopped into florets

1 cup sharp cheddar cheese, shredded

1/2 cup cream cheese, softened

1/4 cup unsalted butter

1/2 cup whole milk (or more for desired consistency)

2 cloves garlic, minced

Salt and pepper to taste

2 tablespoons chopped fresh chives or parsley, for garnish

Instructions
 

Prepare the Cauliflower: Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for about 10-12 minutes, or until tender. Drain and set aside.

    Sauté the Garlic: In a small saucepan, melt the butter over medium heat. Add minced garlic and sauté for about 1-2 minutes until fragrant but not browned.

      Mash the Cauliflower: In a large mixing bowl or the pot you used for boiling, add the drained cauliflower. Pour in the sautéed garlic and butter mixture, cream cheese, shredded cheddar cheese, and whole milk. Season with salt and pepper.

        Blend Until Smooth: Using a potato masher or an immersion blender, mash or blend the mixture until creamy and smooth. If it’s too thick, add more milk, a little at a time, until desired consistency is reached.

          Taste and Adjust: Taste the mash and adjust the seasoning, adding more salt and pepper if needed.

            Garnish and Serve: Transfer the creamy cheddar cauliflower mash to a serving bowl. Garnish with chopped chives or parsley and an extra sprinkle of cheddar if desired. Serve hot as a delightful side dish.
