2 tablespoons olive oil

3 cloves garlic, minced

1 cup vegetable broth

1 cup unsweetened almond milk (or any milk of your choice)

1 teaspoon nutritional yeast (optional, for a cheesy flavor)

1/2 teaspoon garlic powder

1/4 teaspoon nutmeg

Salt and pepper to taste

8 ounces of your favorite pasta (e.g., fettuccine, penne)

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (optional, for serving)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Prepare the Cauliflower: In a medium saucepan, heat 2 tablespoons of olive oil over medium heat. Add the cauliflower florets and sauté for about 5 minutes until they begin to soften. Add the minced garlic and cook for an additional minute, stirring frequently to avoid burning.

      Blend the Sauce: After sautéing, add the sautéed cauliflower and garlic to a blender. Pour in the vegetable broth and almond milk, then add nutritional yeast, garlic powder, nutmeg, salt, and pepper. Blend until the mixture is completely smooth and creamy. Adjust seasoning to taste.

        Combine Pasta and Sauce: In the large pot you used for cooking the pasta, combine the drained pasta with the creamy cauliflower sauce. Stir well, adding reserved pasta water a little at a time until you reach your desired sauce consistency (you may not need all the pasta water).
