Creamy Broccoli Cheddar Quinoa

1 cup quinoa, rinsed

2 cups vegetable broth

2 cups fresh broccoli florets

1 cup shredded sharp cheddar cheese

1 cup milk (or plant-based milk)

2 tablespoons cream cheese (or vegan cream cheese)

2 tablespoons olive oil

1 small onion, chopped

2 cloves garlic, minced

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon paprika

¼ teaspoon nutmeg (optional for warmth)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil, then reduce the heat, cover, and simmer for about 15 minutes or until all the liquid is absorbed. Remove from heat and let it sit, covered, for 5 minutes before fluffing with a fork.

    Prepare the Broccoli: While the quinoa is cooking, bring a separate pot of water to a boil. Add the fresh broccoli florets and blanch them for about 2-3 minutes until vibrant green. Drain and immediately transfer the broccoli to a bowl of ice water to stop the cooking process. Once cooled, drain again and set aside.

      Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until soft and translucent. Stir in the minced garlic and cook for another minute until fragrant.

        Make the Creamy Sauce: Lower the heat and add the cooked quinoa to the skillet with the sautéed onions and garlic. Pour in the milk and add the cream cheese, cooking until the cream cheese is fully melted and integrated. Stir continuously to create a creamy consistency.

          Combine and Season: Add the blanched broccoli to the quinoa mixture. Toss in the shredded cheddar cheese and stir until melted and combined. Season with salt, black pepper, paprika, and nutmeg (if using) to taste.
