Creamy Baked Penne with Spinach & Alfredo

12 oz penne pasta

2 cups fresh spinach, chopped

1 cup heavy cream

1 cup Alfredo sauce (store-bought or homemade)

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

2 cloves garlic, minced

1 tablespoon olive oil

Salt and pepper to taste

1/2 teaspoon red pepper flakes (optional)

Fresh parsley, chopped for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: Bring a large pot of salted water to a boil. Add the penne pasta and cook until al dente, according to package instructions (usually about 8-10 minutes). Drain and set aside.

      Sauté the Spinach: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds, until fragrant. Add the chopped spinach and cook until wilted, about 2-3 minutes. Season with salt, pepper, and red pepper flakes (if using).

        Combine the Sauces: In a large mixing bowl, combine the heavy cream and Alfredo sauce. Stir in the cooked spinach mixture and mix well.

          Mix the Pasta: Add the cooked penne pasta to the sauce mixture and toss to coat evenly. Stir in half of the grated Parmesan and half of the shredded mozzarella, reserving the rest for topping.

            Transfer to Baking Dish: Pour the creamy penne mixture into a greased 9x13-inch baking dish, spreading it out evenly.

              Top with Cheese: Sprinkle the remaining Parmesan and mozzarella cheese over the top of the pasta.

                Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, until the cheese is bubbly and golden brown.

                  Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.
