4 large whole wheat tortillas

2 ripe avocados, pitted and peeled

1/2 cup plain Greek yogurt

1/4 cup buttermilk

1 packet (1 oz) ranch dressing mix (or homemade equivalent)

1 cup shredded lettuce (or mixed greens)

1 cup diced tomatoes

1/2 cup shredded carrots

1/2 cup sweet corn (canned or cooked)

1/2 cup black beans, drained and rinsed

1/4 cup chopped fresh cilantro (optional)

Instructions
 

Prepare the Avocado Ranch Dressing:
