1 cup corn kernels (fresh, canned, or frozen)

1 medium avocado, diced

1 cup cherry tomatoes, halved

1 cup shredded lettuce (iceberg, romaine, or mixed greens)

½ cup shredded cheddar cheese

½ cup sour cream or Greek yogurt

1 packet ranch dressing mix

1 lime, juiced

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Optional toppings: sliced jalapeños, hot sauce, tortilla strips

Instructions

Prepare the Creamy Ranch Dressing: In a small bowl, combine the sour cream (or Greek yogurt) with the ranch dressing mix and lime juice. Whisk until smooth and adjust seasoning with salt and pepper if needed. Set aside.

Cook the Quinoa/Rice: If you haven't already, cook quinoa or rice according to package instructions. Fluff with a fork and set aside to cool slightly.

Combine Bowl Components: In a large mixing bowl, gently combine the black beans, corn, diced avocado, cherry tomatoes, and shredded lettuce. Toss with a pinch of salt and pepper to enhance flavors.

Assemble the Taco Bowls: In serving bowls, add a base of quinoa or rice. Top with the black bean and vegetable mixture, followed by a generous drizzle of the creamy avocado ranch dressing.

Add Cheese and Garnish: Sprinkle with shredded cheddar cheese and garnish with fresh cilantro. If desired, add any optional toppings like sliced jalapeños, hot sauce, or tortilla strips for extra crunch.

Serve and Enjoy: Serve the taco bowls immediately, or cover and refrigerate for a quick meal option later.
