12 oz fettuccine or spaghetti

2 ripe avocados

2 cloves garlic, minced

1/4 cup fresh basil leaves

1/4 cup Parmesan cheese, grated (plus extra for serving)

2 tbsp olive oil

2 tbsp lemon juice

Salt and pepper, to taste

Red pepper flakes, to taste (optional)

1/4 cup cherry tomatoes, halved (for garnish)

Extra basil leaves, for garnish

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine or spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Prepare the Avocado Sauce: In a food processor, combine the ripe avocados, minced garlic, basil leaves, grated Parmesan cheese, olive oil, and lemon juice. Blend until smooth and creamy. If the sauce is too thick, gradually add some of the reserved pasta water until you reach your desired consistency.

      Season the Sauce: Taste the avocado sauce and season with salt, pepper, and red pepper flakes if using. Blend again to mix the flavors.

        Combine Pasta and Sauce: In a large mixing bowl, toss the cooked pasta with the creamy avocado sauce, adding more reserved pasta water as needed to ensure the pasta is well coated.
