4 medium bell peppers (any color)

1 cup cooked quinoa (or rice)

1 cup black beans (canned, drained, and rinsed)

1 cup corn (frozen or canned)

1 cup cherry tomatoes, halved

1 cup shredded cheese (cheddar, Monterey Jack, or a blend)

1 small red onion, diced

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh cilantro or parsley for garnish

1 lime, cut into wedges (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Slice the tops off the bell peppers and remove the seeds and membranes. Set aside.

      Sauté the Veggies: In a large skillet, heat the olive oil over medium heat. Add the diced red onion and minced garlic, and sauté for about 2-3 minutes until translucent.

        Mix the Filling: In the same skillet, stir in the cooked quinoa, black beans, corn, and cherry tomatoes. Add the cumin, smoked paprika, salt, and pepper. Mix well and cook for another 3-4 minutes, allowing the flavors to meld.

          Add Cheese: Remove the skillet from heat and fold in 3/4 cup of shredded cheese into the veggie mixture.

            Stuff the Peppers: Spoon the veggie mixture into each bell pepper, packing it down gently. Place the stuffed peppers upright in a baking dish.

              Top with Cheese: Sprinkle the remaining cheese on top of the stuffed peppers.

                Bake: Cover the baking dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is bubbly and slightly golden.

                  Garnish and Serve: Remove the stuffed peppers from the oven and let them cool for a few minutes. Garnish with fresh cilantro or parsley and serve with lime wedges on the side for an extra zing.
