4 large russet potatoes, peeled and diced

1 medium onion, finely chopped

2 cloves garlic, minced

4 cups low-sodium chicken broth

1 cup heavy cream

1 cup shredded cheddar cheese

1/2 cup sour cream

4 slices of bacon, cooked and crumbled

3 green onions, sliced (green parts only)

Salt and pepper to taste

2 tablespoons olive oil

1 teaspoon smoked paprika

1/2 teaspoon dried thyme

Optional: Extra cheese and bacon for topping

Prepare the Potatoes: In a large pot, heat the olive oil over medium heat. Add the chopped onions, and sauté until they are tender and translucent, about 5 minutes. Add the minced garlic and sauté for another minute until fragrant.

    Cook the Potatoes: Add the diced potatoes to the pot, pouring in the chicken broth. Bring it to a boil, then reduce to a simmer. Cover and let cook until the potatoes are fork-tender, roughly 15-20 minutes.

      Blend the Soup: Using an immersion blender, blend the soup until it reaches your desired consistency. For a chunkier texture, blend just half. If you don’t have an immersion blender, carefully transfer the soup in batches to a countertop blender.

        Add Cream and Seasonings: Stir in the heavy cream, followed by the shredded cheddar cheese, sour cream, smoked paprika, and dried thyme. Mix well and season with salt and pepper to taste. Let it simmer for an additional 5 minutes to allow the flavors to meld.
