Ingredients

For the Fritter Bites:

2 medium apples (preferably Honeycrisp or Fuji), peeled and diced

1 cup all-purpose flour

1/4 cup granulated sugar

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup milk

1 large egg

1 teaspoon vanilla extract

1/4 cup chopped walnuts or pecans (optional)

Vegetable oil for frying

For the Glaze:

1 cup powdered sugar

2 tablespoons milk (adjust for consistency)

1/2 teaspoon vanilla extract

A pinch of salt

Optional: A few drops of apple or cinnamon extract for enhanced flavor

Instructions

Prepare the Apples: In a medium bowl, combine the diced apples with a sprinkle of cinnamon and set aside. This will help infuse the apple pieces with flavor.

Mix Dry Ingredients: In a separate bowl, whisk together flour, granulated sugar, baking powder, baking soda, ground cinnamon, and salt.

Combine Wet Ingredients: In another bowl, whisk together the milk, egg, and vanilla extract until well combined.

Mix Batter: Slowly pour the wet mixture into the dry ingredients and stir until just combined. Be careful not to over-mix. Gently fold in the diced apples and nuts (if using).

Heat the Oil: In a deep pan or fryer, heat about 2 inches of vegetable oil to 350°F (175°C). Use a candy thermometer to check the temperature for optimal frying.

Fry the Bites: Using a tablespoon, drop small amounts of batter into the hot oil, making sure not to overcrowd the pan. Fry until golden brown on one side (about 2-3 minutes), then carefully flip and fry for another 2-3 minutes until golden brown and fully cooked. Remove with a slotted spoon and drain on paper towels.

Prepare the Glaze: While the fritter bites are frying, whisk together powdered sugar, milk, vanilla extract, and a pinch of salt in a bowl. Adjust the milk to achieve a smooth, drizzling consistency.

Glaze the Fritter Bites: Once the fritter bites are cool enough to handle but still warm, dip them into the glaze or drizzle it over the top using a spoon.

Serve and Enjoy: Place the glazed fritter bites on a serving platter. Serve warm, and enjoy the cozy treat with a hot cup of tea or coffee!
