1 medium butternut squash, peeled and cubed

1 lb Italian sausage (either mild or spicy, your choice)

1 medium onion, diced

3 cloves garlic, minced

4 cups chicken or vegetable broth

1 can (14 oz) diced tomatoes, with juices

1 cup fresh spinach, chopped

1 package (9 oz) cheese tortellini (fresh or frozen)

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper to taste

2 tablespoons olive oil

Grated Parmesan cheese, for serving

Fresh parsley, chopped, for garnish

Instructions
 

Sauté the Sausage: In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the Italian sausage, breaking it apart with a spoon. Cook until browned and cooked through, about 5-7 minutes. Use a slotted spoon to remove the sausage from the pot and set aside, leaving the drippings in the pot.

    Cook the Veggies: In the same pot, add the diced onion and sauté until translucent, about 4-5 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

      Add the Squash: Stir in the cubed butternut squash and cook for about 5 minutes, allowing it to absorb the flavors.

        Add Liquids and Season: Pour in the chicken or vegetable broth and the diced tomatoes with their juices. Sprinkle in dried thyme, dried oregano, salt, and pepper. Bring the mixture to a boil.
