1 tablespoon olive oil

1 medium onion, chopped

3 cloves garlic, minced

3 medium carrots, diced

2 stalks celery, diced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 bay leaf

6 cups low-sodium chicken broth

1 cup uncooked long-grain rice

2 cups cooked chicken, shredded (rotisserie chicken works great)

1 cup frozen peas

1 cup fresh spinach (or kale), chopped

Salt and pepper, to taste

Juice of 1 lemon (for brightness)

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Stir in the minced garlic, diced carrots, and celery. Sauté for another 5-7 minutes until the vegetables are tender.

      Add the dried thyme, dried rosemary, and bay leaf. Stir for about 1 minute until fragrant.

        Pour in the chicken broth and bring to a gentle boil. Once boiling, add the uncooked rice, reduce heat, and simmer uncovered for 15-20 minutes or until the rice is cooked through.

          Stir in the shredded chicken, frozen peas, and chopped spinach. Let it simmer for an additional 5 minutes until the spinach has wilted and peas are heated.

            Remove the bay leaf and season with salt and pepper to taste. Squeeze in the lemon juice for a fresh kick and stir well.
