12 oz penne pasta

1 lb ground beef or turkey

1 medium onion, finely chopped

3 cloves garlic, minced

1 bell pepper (any color), chopped

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes with green chilies

1 cup corn (fresh, frozen, or canned)

1 tablespoon chili powder

1 teaspoon paprika

1 teaspoon cumin

1 teaspoon dried oregano

Salt and pepper to taste

1 cup shredded cheddar cheese

Fresh cilantro or parsley, for garnish

2 tablespoons olive oil

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Vegetables: In a large skillet over medium heat, add olive oil. Once hot, add the chopped onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and chopped bell pepper, and sauté for another 2-3 minutes until soft.

      Brown the Meat: Push the veggies to the side of the skillet, then add the ground beef or turkey to the center. Cook, breaking it apart with a spoon, until browned and cooked through (about 5-7 minutes). Season with salt, pepper, and stir in the chili powder, paprika, cumin, and oregano.

        Combine the Ingredients: Once the meat is browned, mix in the black beans, diced tomatoes (with their juice), and corn. Stir everything together and let it cook for an additional 5 minutes, allowing the flavors to meld.

          Mix with Pasta: Add the cooked penne pasta to the skillet and toss everything together until evenly combined. Cook for another 2 minutes until heated through.

            Add Cheese: Remove the skillet from heat and sprinkle the shredded cheddar cheese on top. Cover for 2 minutes to allow the cheese to melt.
