Ingredients

4 boneless, skinless chicken breasts

1 cup BBQ sauce (your favorite brand)

8 slices of crispy bacon

1 cup shredded sharp cheddar cheese

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

2 tablespoons olive oil

2 green onions, sliced (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Chicken: In a large bowl, season the chicken breasts with smoked paprika, garlic powder, onion powder, salt, and pepper. Drizzle with olive oil and rub the spices evenly over the chicken.

Cook the Bacon: In a skillet over medium heat, cook the bacon until crispy. Remove from the skillet and let it drain on paper towels. Reserve 2 tablespoons of the bacon drippings in the skillet.

Sear the Chicken: In the same skillet with the reserved bacon drippings, sear the seasoned chicken breasts for about 4-5 minutes on each side until golden brown.

Add BBQ Sauce: Once seared, place the chicken in a baking dish and brush a generous amount of BBQ sauce over the top of each piece.

Layer with Bacon and Cheese: Crumble the cooked bacon and sprinkle it evenly over the chicken, followed by a generous topping of shredded cheddar cheese.

Bake: Cover the baking dish with aluminum foil (to keep the moisture in) and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and melted.

Garnish and Serve: Remove from the oven, garnish with sliced green onions, and serve hot. Pair with coleslaw or cornbread for a complete cowboy meal!
