2 large eggs

1/4 cup milk (or a non-dairy alternative)

1/4 cup olive oil

1 cup all-purpose flour (or whole wheat flour for a healthier option)

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup shredded cheese (cheddar or feta works great)

1/4 cup chopped fresh herbs (such as chives, parsley, or dill)

1/4 teaspoon black pepper

Optional: 1/2 cup chopped vegetables (like spinach, bell peppers, or sun-dried tomatoes)

Instructions
 

Preheat your oven to 375°F (190°C). Line a muffin tin with muffin liners or grease it lightly with cooking spray.

    In a large mixing bowl, combine the cottage cheese, eggs, milk, and olive oil. Whisk together until you have a smooth mixture.

      In another bowl, whisk together the flour, baking powder, baking soda, salt, and black pepper.

        Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Avoid overmixing to keep the muffins light and fluffy.

          Fold in the shredded cheese, fresh herbs, and any optional chopped vegetables you choose to add.

            Evenly distribute the batter into the prepared muffin tin, filling each cup about 2/3 full.
