2 cups cottage cheese (large curd)

3 cups frozen hashbrowns (thawed)

1 cup shredded cheddar cheese (plus extra for topping)

1 cup sour cream

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon garlic powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon dried chives (optional)

1 cup chopped green onions (for garnish)

1/2 cup breadcrumbs (for extra crunch)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with cooking spray or butter.

    Prepare Mixture: In a large mixing bowl, combine the cottage cheese, thawed hashbrowns, shredded cheddar cheese, sour cream, chopped onion, minced garlic, garlic powder, salt, pepper, and dried chives. Mix well until all ingredients are thoroughly blended.

      Transfer to Baking Dish: Pour the mixture into the greased baking dish, spreading it evenly with a spatula.

        Add Toppings: Sprinkle the remaining shredded cheddar cheese over the top, followed by breadcrumbs for a crunchy topping.

          Bake: Place the casserole in the preheated oven and bake for 35-40 minutes, or until the casserole is hot and bubbly and the top is golden brown.
