½ red onion, finely chopped

¼ cup fresh dill, chopped

2 tablespoons olive oil

1 tablespoon apple cider vinegar

Salt and pepper to taste

1 teaspoon garlic powder (optional)

A squeeze of lemon juice (optional)

Instructions

In a large mixing bowl, combine the cottage cheese, diced cucumber, halved cherry tomatoes, and finely chopped red onion.

In a separate small bowl, whisk together the olive oil, apple cider vinegar, garlic powder (if using), salt, and pepper until well blended.

Pour the dressing over the cottage cheese mixture, then gently fold everything together until well combined.

Add the chopped fresh dill and a squeeze of lemon juice, stirring to integrate the flavors.

Taste and adjust the seasoning if needed, adding more salt, pepper, or lemon juice to your preference.

Let the salad chill in the refrigerator for about 15-20 minutes before serving to enhance the flavors.
