1 cup fresh corn kernels (or 1 can, drained)

1/2 cup all-purpose flour

1/4 cup cornmeal

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon paprika (smoked or regular)

1/4 cup green onions, finely chopped

1/4 cup red bell pepper, finely chopped

1 large egg, lightly beaten

1/2 cup milk (dairy or non-dairy)

1/4 cup shredded cheddar cheese (optional)

Oil for frying (vegetable or olive oil)

Prepare the batter: In a large mixing bowl, combine the flour, cornmeal, baking powder, baking soda, salt, black pepper, and paprika, whisking together until well mixed.

    Add the veggies: Stir in the fresh corn kernels, chopped green onions, and red bell pepper into the dry ingredients until evenly coated.

      Mix wet ingredients: In another bowl, whisk together the beaten egg and milk until combined. If you’re using cheese, add it in now.

        Combine wet and dry: Pour the wet mixture into the dry ingredients bowl and stir gently until just combined. Be careful not to overmix; a few lumps are okay!

          Heat the oil: In a large skillet, heat about 1/4 inch of oil over medium heat until shimmering. You can test the oil readiness by dropping in a small spoonful of batter; it should sizzle immediately.

            Fry the fritters: Using a tablespoon or ice cream scoop, drop spoonfuls of the batter into the hot oil, leaving space between each fritter. Fry in batches, about 3-4 minutes on each side, until golden brown and crispy.
