Ingredients

2 cups green cabbage, finely shredded

1 cup purple cabbage, finely shredded

1 cup carrots, grated

1 cup bell peppers (mix of red, yellow, and orange), finely diced

1 cup cherry tomatoes, halved

1 cup corn kernels (fresh or canned)

1/2 cup green onions, chopped

1/2 cup fresh cilantro, chopped

3/4 cup sour cream

1/4 cup buttermilk

1 packet (1 oz) ranch dressing mix

1 tablespoon apple cider vinegar

Salt and pepper to taste

Instructions

Prepare the Vegetables: In a large mixing bowl, combine the green cabbage, purple cabbage, grated carrots, diced bell peppers, halved cherry tomatoes, corn kernels, green onions, and chopped cilantro. Toss them gently to ensure an even distribution of colors.

Make the Dressing: In a separate small bowl, whisk together the sour cream, buttermilk, ranch dressing mix, apple cider vinegar, and a pinch of salt and pepper. Stir until the dressing is smooth and creamy.

Combine Slaw and Dressing: Pour the ranch dressing over the prepared slaw mixture. Using tongs or a spatula, gently fold the dressing into the slaw until all the veggies are well-coated.

Chill and Serve: Cover the slaw with plastic wrap or transfer it to an airtight container. Chill in the refrigerator for at least 30 minutes to let the flavors meld together. Before serving, give it a quick toss to refresh the slaw.

Garnish (optional): For an extra pop, sprinkle some additional chopped cilantro or crumbled tortilla chips on top just before serving.
