Cold Tomato Basil Soup

4 ripe medium tomatoes, chopped

1 cup cherry tomatoes, halved

1 small cucumber, peeled and diced

1/2 red bell pepper, diced

1/4 cup red onion, finely chopped

2 garlic cloves, minced

1/4 cup fresh basil leaves, packed

2 cups vegetable broth (cold or at room temperature)

2 tablespoons olive oil

1 tablespoon red wine vinegar

Salt and freshly ground black pepper, to taste

Optional garnish: additional basil leaves, a drizzle of olive oil, and croutons

Instructions
 

Prepare the Vegetables: In a large mixing bowl, combine the chopped tomatoes, cherry tomatoes, cucumber, red bell pepper, red onion, and minced garlic. Toss them gently to mix all the ingredients evenly.

    Blend the Base: Transfer the vegetable mixture to a blender or food processor. Add the fresh basil leaves, olive oil, and red wine vinegar. Pour in the cold vegetable broth. Blend on high speed until smooth. If you prefer a chunkier texture, blend for a shorter period or pulse until desired consistency is reached.

      Season: Taste the soup and season with salt and freshly ground black pepper. Adjust the seasoning to your preference.

        Chill the Soup: Refrigerate the blended soup for at least 30 minutes to an hour to allow the flavors to meld and the soup to become nice and cold.
