8 oz cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

1 cup strawberries, hulled and sliced

1/4 cup granulated sugar (for strawberries)

1/2 teaspoon lemon juice

1 cup crushed graham crackers (about 10 full sheets)

4 tablespoons unsalted butter, melted

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the Strawberries: In a medium bowl, combine the sliced strawberries with granulated sugar and lemon juice. Toss gently to coat and let the mixture sit for about 15-20 minutes until the strawberries release their juices.

    Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add in the powdered sugar and continue to beat until well combined. Stir in the vanilla extract.

      Whip the Cream: In a separate bowl, whip the heavy cream until stiff peaks form. Carefully fold the whipped cream into the cream cheese mixture until fully combined and smooth.

        Prepare the Crust: In another bowl, mix the crushed graham crackers with the melted butter until the mixture resembles wet sand.

          Assemble the Cups: In serving cups or small glasses, layer the crust mixture (about 2 tablespoons), followed by a layer of the cheesecake filling (about 3 tablespoons), and then top with a layer of the marinated strawberries (about 2 tablespoons). Repeat the layers until the cups are filled, finishing with the strawberries on top.

            Chill: Cover the assembled cups with plastic wrap and refrigerate for at least 2 hours or until fully chilled and set.
