Cold Pesto Pasta with Cherry Tomatoes

12 oz (340g) of pasta (fusilli or penne work well)

1 cup fresh basil leaves

1/3 cup pine nuts (or walnuts)

1/2 cup grated Parmesan cheese

2 garlic cloves

1/2 cup extra-virgin olive oil

Salt and pepper to taste

2 cups cherry tomatoes, halved

1/4 cup fresh mozzarella balls (optional)

1 tbsp balsamic vinegar (optional)

Fresh basil leaves for garnish

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Make the Pesto: In a food processor, combine the fresh basil, pine nuts, Parmesan cheese, and garlic. Pulse until the ingredients are finely chopped. While the processor is running, slowly drizzle in the olive oil until the mixture is smooth and well-blended. Season with salt and pepper to taste.

      Mix the Pasta and Pesto: In a large bowl, combine the cooled pasta with the prepared pesto. Toss until the pasta is evenly coated.

        Add Cherry Tomatoes and Mozzarella: Gently fold in the halved cherry tomatoes and fresh mozzarella balls if using. Drizzle with balsamic vinegar for added flavor and toss gently to combine.
