12 oz (340 g) pasta (farfalle or penne works great)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, finely chopped

1/2 cup fresh basil leaves, torn or chopped

1/4 cup feta cheese, crumbled

1/4 cup olives (Kalamata or green), pitted and sliced

3/4 cup extra virgin olive oil

Juice and zest of 2 medium lemons

2 tablespoons balsamic vinegar

1 garlic clove, minced

Salt and pepper to taste

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prep the Veggies: While the pasta is cooking, prepare the vegetables. Halve the cherry tomatoes, dice the cucumber, and finely chop the red onion. If you haven't already, tear or chop the fresh basil and slice the olives.

      Make the Dressing: In a small bowl, whisk together the olive oil, lemon juice, lemon zest, balsamic vinegar, minced garlic, salt, and pepper. Taste and adjust seasoning if necessary.

        Combine Ingredients: In a large mixing bowl, add the cooled pasta, cherry tomatoes, cucumber, red onion, basil, olives, and feta cheese. Pour the dressing over the top, then toss gently until everything is well combined and coated.

          Chill: Cover the bowl with plastic wrap or transfer the salad to an airtight container. Refrigerate for at least 30 minutes to allow the flavors to meld together.
