Cold Chickpea Pasta Salad

8 oz whole wheat pasta (fusilli or rotini)

1 can (15 oz) chickpeas, drained and rinsed

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, finely chopped

1 bell pepper (any color), diced

1/4 cup black olives, sliced

1/4 cup fresh parsley, chopped

1/4 cup feta cheese, crumbled (optional)

1/4 cup olive oil

2 tablespoons red wine vinegar

1 tablespoon lemon juice

1 teaspoon garlic powder

Salt and pepper to taste

Cook the Pasta: In a large pot, bring salted water to a boil. Add the whole wheat pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool.

    Prepare the Vegetables: While the pasta is cooking, chop the cherry tomatoes, cucumber, red onion, and bell pepper. Slice the black olives and chop the parsley.

      Make the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, garlic powder, and a pinch of salt and pepper until well combined.

        Combine Ingredients: In a large mixing bowl, combine the cooled pasta, chickpeas, cherry tomatoes, cucumber, red onion, bell pepper, black olives, and parsley. If using, add the crumbled feta cheese.

          Add the Dressing: Pour the dressing over the salad and gently toss everything together until the pasta and vegetables are well coated.

            Chill: Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
