1 cup shredded unsweetened coconut

1/2 cup cold unsalted butter, cubed (or coconut oil for a dairy-free option)

1/4 cup sliced almonds (optional, for added crunch)

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Peach Filling: In a large mixing bowl, combine the sliced peaches with granulated sugar, lemon juice, vanilla extract, cornstarch, and cinnamon. Toss gently until the peaches are well coated. Transfer the mixture into a greased 9x9 inch baking dish or an equivalent size.
