Coconut macaroons have a rich history that dates back to the 19th century. Originally, these sweet treats are believed to have been created by Italian monks in a monastery in the region of Amalfi. The name "macaroon" is derived from the Italian word "maccarone," which means "paste," referring to the mixture of ingredients that form the base of these cookies. Over time, the recipe evolved, and coconut became a staple ingredient, especially in regions where the fruit was abundant.

Ingredients

2 2/3 cups sweetened shredded coconut

1/2 cup granulated sugar

1/4 cup all-purpose flour

1/4 teaspoon salt

2 large egg whites

1 teaspoon pure vanilla extract

1/4 teaspoon almond extract (optional for a deeper flavor)

1/2 cup dark chocolate chips (for drizzling or dipping)

Instructions

Preheat the Oven: Begin by preheating your oven to 325°F (160°C). Line a baking sheet with parchment paper or a silicone baking mat.

Prepare the Coconut Mixture: In a large mixing bowl, combine the sweetened shredded coconut, granulated sugar, all-purpose flour, and salt. Mix well to ensure the ingredients are evenly distributed.

Whisk the Egg Whites: In a separate bowl, whisk the egg whites until frothy. You don’t need to make peaks; just enough to incorporate air.

Combine Ingredients: Pour the whisked egg whites and vanilla extract (and almond extract, if using) into the coconut mixture. Stir until everything is well combined and the coconut is fully coated.

Shape the Macaroons: Using a cookie scoop or your hands, form small mounds (about 1.5 inches in size) and place them on the prepared baking sheet, leaving about an inch between each mound. You can shape them into pyramids or rounded mounds according to your preference.

Bake: Bake in the preheated oven for 15-20 minutes, or until the macaroons are golden brown on the outside. Keep a close eye on them after the 15-minute mark, as they can brown quickly.

Cool Down: Remove from the oven and let them cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Prepare the Chocolate (Optional): While the macaroons are cooling, melt the dark chocolate chips in a microwave-safe bowl or over a double boiler. If using the microwave, heat in 30-second increments, stirring in between until fully melted.

Drizzle or Dip: Once the macaroons are cool, you can either drizzle the melted chocolate over them using a fork or dip the bottoms into the chocolate for an extra treat. Allow the chocolate to set on a parchment-lined tray.

Enjoy! Your Tropical Bliss Coconut Macaroons are ready to be savored! Store in an airtight container at room temperature for up to a week.
