1 lb large shrimp, peeled and deveined

1 cup coconut milk

Zest and juice of 2 limes

2 tablespoons honey

1 teaspoon cayenne pepper (adjust for spice preference)

1 teaspoon garlic powder

1 teaspoon ground ginger

1 teaspoon sea salt

1 cup unsweetened shredded coconut

Fresh cilantro for garnish

Bamboo or metal skewers

Marinate the Shrimp: In a mixing bowl, combine coconut milk, lime zest, lime juice, honey, cayenne pepper, garlic powder, ginger, and sea salt. Whisk until well blended. Add the shrimp and toss to coat thoroughly. Cover and let marinate in the refrigerator for at least 30 minutes, preferably up to 2 hours.
