1.5 lbs (680 g) boneless, skinless chicken thighs, cut into 1-inch pieces

1 can (13.5 oz) coconut milk

Zest of 2 limes

Juice of 1 lime

3 tablespoons honey

2 tablespoons soy sauce (or tamari for gluten-free)

2 teaspoons grated fresh ginger

2 garlic cloves, minced

1 teaspoon red pepper flakes (adjust to taste)

1 teaspoon ground cumin

1 teaspoon salt

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Skewers (wooden or metal)

Instructions
 

Marinade Preparation: In a large mixing bowl, whisk together the coconut milk, lime zest, lime juice, honey, soy sauce, grated ginger, minced garlic, red pepper flakes, cumin, and salt until well combined.

    Marinate the Chicken: Add the chicken pieces to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap or transfer the mixture to a resealable plastic bag. Allow the chicken to marinate in the refrigerator for at least 1 hour, or up to 6 hours for maximum flavor.

      Soak Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during grilling.

        Preheat the Grill: Preheat your grill to medium-high heat (approximately 400°F or 200°C). If using an oven, you can also preheat the broiler.

          Skewering: Thread the marinated chicken pieces onto the skewers, leaving a little space in between each piece for even cooking. Discard any leftover marinade.

            Grilling: Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. Chicken should reach an internal temperature of 165°F (75°C).
