1 lb ground beef

1 lb ground pork

1 cup diced onions

1 cup diced bell peppers (green and red)

2 cloves garlic, minced

1 cup shredded provolone cheese

1 cup breadcrumbs

2 large eggs

1/4 cup Worcestershire sauce

1 tbsp Dijon mustard

1 tsp salt

1/2 tsp black pepper

1/2 tsp smoked paprika

1 tbsp olive oil (for sautéing)

Optional: additional provolone cheese for topping

Optional: sliced hoagie rolls for serving

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Sauté Vegetables: In a skillet, heat olive oil over medium heat. Add diced onions and bell peppers. Sauté for about 5-7 minutes, or until softened. Add minced garlic and sauté for an additional 1-2 minutes. Remove from heat and let cool slightly.

      Combine Ingredients: In a large mixing bowl, combine the ground beef, ground pork, sautéed vegetable mixture, shredded provolone cheese, breadcrumbs, eggs, Worcestershire sauce, Dijon mustard, salt, black pepper, and smoked paprika. Mix until well combined, but be careful not to overmix.

        Shape the Loaf: Transfer the meat mixture into a loaf pan, shaping it into a compact loaf. If you like, you can create a slight indentation down the center to allow for even cooking.

          Add Cheese Topping (Optional): If you’d like extra cheesiness, place additional provolone cheese slices on top of the meatloaf.
