Classic Chicken & Sweet Potato Stew

1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces

2 large sweet potatoes, peeled and diced into 1-inch cubes

1 medium onion, diced

3 cloves garlic, minced

2 carrots, sliced

2 stalks celery, diced

1 can (14 oz) diced tomatoes (with juice)

4 cups chicken broth

1 tsp dried thyme

1 tsp dried rosemary

1 bay leaf

Salt and pepper to taste

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Chicken: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chicken pieces and season with salt and pepper. Brown the chicken for about 5-7 minutes, stirring occasionally until golden. Remove the chicken from the pot and set aside.

    Cook the Vegetables: In the same pot, add the diced onion, garlic, carrots, and celery. Sauté for about 4-5 minutes until the onion becomes translucent and the vegetables start to soften.

      Add Sweet Potatoes: Stir in the diced sweet potatoes and continue to cook for another 5 minutes, allowing them to caramelize slightly.

        Combine Ingredients: Return the browned chicken to the pot. Add the diced tomatoes (with juice), chicken broth, thyme, rosemary, bay leaf, and additional salt and pepper if needed.

          Simmer: Bring the stew to a gentle boil, then reduce the heat to low. Cover and let it simmer for about 25-30 minutes, or until the chicken is cooked through and the sweet potatoes are tender.

            Final Touches: Remove the bay leaf from the pot. Taste the stew and adjust seasoning if necessary.
