Citrus Kissed Farro Salad

Ingredients
  

1 cup farro

2 cups vegetable broth or water

1 cup diced cucumber

1 cup cherry tomatoes, halved

1/2 red onion, finely chopped

1 cup bell peppers (assorted colors), diced

1/2 cup feta cheese, crumbled (optional)

1/4 cup fresh parsley, chopped

1/4 cup fresh mint, chopped

Juice and zest of 1 large lemon

Juice and zest of 1 large orange

3 tablespoons olive oil

1 teaspoon honey (or maple syrup for a vegan option)

Salt and freshly ground black pepper, to taste

Instructions
 

Cook the Farro: In a medium saucepan, combine the farro and vegetable broth (or water). Bring to a boil, then reduce heat and simmer for about 25-30 minutes, or until the farro is tender but still chewy. Drain any excess liquid and set aside to cool.

    Prepare the Dressing: In a small bowl, whisk together the lemon juice, lemon zest, orange juice, orange zest, olive oil, honey (or maple syrup), salt, and pepper until well combined.

      Combine the Ingredients: In a large mixing bowl, add the cooked farro, diced cucumber, cherry tomatoes, red onion, bell peppers, feta cheese (if using), parsley, and mint.

        Dress the Salad: Pour the citrus dressing over the salad ingredients and toss gently to coat everything evenly.

          Chill and Serve: Let the salad sit for at least 20 minutes at room temperature or refrigerate for 1 hour before serving. This allows the flavors to meld beautifully.
