1/2 cup brown sugar

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon salt

2 cups milk (dairy or non-dairy)

2 large eggs

1/4 cup melted coconut oil (or unsalted butter)

1 teaspoon pure vanilla extract

1 cup raisins

1/2 cup chopped walnuts (optional)

Fresh fruit or nuts for topping (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a 9x9 inch baking dish with cooking spray or a little coconut oil.

    Mix Dry Ingredients: In a large bowl, combine the rolled oats, brown sugar, baking powder, ground cinnamon, and salt. Whisk until well combined.
