For the Cake:

1 ¾ cups all-purpose flour

1 ½ cups granulated sugar

¾ cup unsweetened cocoa powder

1 ½ tsp baking powder

1 ½ tsp baking soda

1 tsp salt

2 large eggs

1 cup whole milk

½ cup vegetable oil

2 tsp vanilla extract

1 cup boiling water

For the Peanut Butter Frosting:

1 cup creamy peanut butter

½ cup unsalted butter, softened

2 cups powdered sugar

2 tsp vanilla extract

2-4 tbsp heavy cream (as needed)

For the Chocolate Ganache Topping:

1 cup semi-sweet chocolate chips

½ cup heavy cream

For Garnish:

Chopped peanuts

Drizzle of melted chocolate

Instructions
 

Preheat the Oven:

    Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.

      Prepare the Cake Batter:

        In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk well to combine. Add eggs, milk, vegetable oil, and vanilla extract. Beat on medium speed for 2 minutes until well blended. Carefully stir in the boiling water until smooth (the batter will be thin).

          Bake the Cake:

            Pour the batter evenly into the prepared cake pans. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.

              Make the Peanut Butter Frosting:

                In a medium bowl, beat the peanut butter and softened butter together until smooth. Gradually add the powdered sugar and vanilla extract. Beat in enough heavy cream to achieve a spreadable consistency.

                  Prepare the Chocolate Ganache:

                    In a small saucepan, heat the heavy cream over medium heat until it just starts to simmer. Pour the hot cream over the chocolate chips in a separate bowl. Let it sit for 2-3 minutes before stirring until smooth.

                      Assemble the Cake:

                        Place one cake layer on a serving plate. Spread a generous amount of peanut butter frosting on top. Place the second cake layer on top and frost the top and sides of the cake with the leftover peanut butter frosting.

                          Add the Ganache:

                            Pour the warm chocolate ganache over the top of the frosted cake, allowing it to drip down the sides.

                              Garnish:

                                Scatter chopped peanuts over the top and drizzle with melted chocolate if desired.
