Ingredients

For the Chocolate Cupcakes:

1 cup all-purpose flour

1 cup granulated sugar

1/3 cup unsweetened cocoa powder

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, softened

2 large eggs

1 teaspoon vanilla extract

1/2 cup buttermilk

1/2 cup hot water

For the Caramel Frosting:

1/2 cup unsalted butter, softened

1 cup packed brown sugar

1/4 cup heavy cream

2 cups confectioners' sugar

1 teaspoon vanilla extract

A pinch of salt

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a cupcake pan with paper liners.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, granulated sugar, cocoa powder, baking soda, baking powder, and salt until well combined.

Cream Butter and Sugar: In a large mixing bowl, beat the softened butter until creamy, about 2 minutes. Gradually add the sugar mixture and beat until light and fluffy.

Add Eggs and Vanilla: Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.

Combine Dry and Wet Ingredients: Gradually add the dry ingredients to the butter mixture, alternating with buttermilk. Start and end with the flour mixture. Mix until just combined.

Add Hot Water: Pour in the hot water and carefully stir until the batter is smooth (the batter will be thin; this is normal!).

Fill Cupcake Liners: Fill each cupcake liner about 2/3 full with the batter. Bake for 18-20 minutes or until a toothpick comes out clean. Allow cooling in the pan for 10 minutes before transferring to a wire rack to cool completely.

Make Caramel Frosting: In a saucepan over medium heat, melt the butter, then add the brown sugar and heavy cream. Stir continuously until it comes to a boil; let boil for 2 minutes without stirring. Remove from heat and allow it to cool for about 10 minutes.

Whisk in Sugar and Flavorings: Gradually whisk in the confectioners' sugar, vanilla extract, and a pinch of salt until smooth and creamy. If the frosting is too thick, you can add a splash more heavy cream to achieve your desired consistency.

Frost the Cupcakes: Once the cupcakes have completely cooled, generously frost each one with the caramel frosting using a spatula or piping bag.

Decorate and Serve: Optionally, drizzle additional caramel sauce over the frosted cupcakes for an extra indulgent touch. Enjoy your delightful chocolate cupcakes with caramel frosting!
