Chocolate Chip Banana Oat Bars

2 ripe bananas, mashed

1 cup rolled oats

1/2 cup almond butter (or peanut butter)

1/4 cup honey or maple syrup

1/2 teaspoon vanilla extract

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup dark chocolate chips

1/4 teaspoon cinnamon (optional)

1/4 cup chopped nuts (optional, walnuts or pecans work well)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper, allowing some overhang for easy removal later.

    Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, almond butter, honey (or maple syrup), and vanilla extract. Stir well until the mixture is smooth and well combined.

      Combine Dry Ingredients: In another bowl, mix together the rolled oats, baking powder, salt, cinnamon (if using), and chocolate chips. If you’re adding nuts, include them in this mixture.

        Combine Wet and Dry: Pour the dry ingredients into the wet ingredients and stir until everything is evenly combined. The batter should be thick and somewhat sticky.

          Spread and Bake: Pour the batter into the prepared baking dish, spreading it out evenly with a spatula. Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.

            Cool and Slice: Once baked, remove from the oven and let it cool in the pan for about 10 minutes. Then use the parchment overhang to lift the bars out of the dish. Allow them to cool completely on a wire rack before cutting into squares or rectangles.
