Chipotle Corn Salsa

Ingredients
  

2 cups fresh sweet corn kernels (about 3-4 ears of corn, or 1 can of drained corn)

1 medium red onion, finely diced

1-2 chipotle peppers in adobo sauce, minced (adjust for spice preference)

1 tablespoon adobo sauce from the chipotle can

1 cup ripe tomatoes, diced (Roma or vine-ripened work well)

1/2 cup red bell pepper, finely diced

1/4 cup fresh cilantro, chopped

Juice of 2 limes

1 teaspoon olive oil

Salt and pepper to taste

Instructions
 

Prepare the Corn: If using fresh corn, bring a large pot of water to a boil. Add the corn and cook for 3-5 minutes until tender. Drain and rinse under cold water to stop the cooking process. If using canned corn, rinse and drain well.

    Combine Ingredients: In a large mixing bowl, combine the cooked corn, diced red onion, minced chipotle peppers, adobo sauce, diced tomatoes, and red bell pepper.

      Dress the Salsa: Drizzle the olive oil and fresh lime juice over the mixture. Add the chopped cilantro, then season with salt and pepper to taste. Mix gently until all ingredients are well combined.

        Chill: Cover the bowl with plastic wrap or a lid and refrigerate the salsa for at least 30 minutes to allow the flavors to meld together.

          Serve: Taste and adjust seasoning if necessary. Serve chilled with tortilla chips, as a topping for tacos, or alongside grilled meats for an extra kick!
