Chilled Summer Rice Paper Rolls

8 rice paper wrappers

1 cup cooked vermicelli rice noodles

1 cup cooked shrimp, halved lengthwise (or tofu for a vegetarian option)

1/2 cup shredded carrots

1/2 cup cucumber, thinly sliced

1/2 cup bell pepper, thinly sliced (use an assortment of colors)

1 cup fresh basil leaves

1 cup fresh mint leaves

1 avocado, sliced

1/4 cup chopped peanuts (optional)

Dipping Sauce:

1/4 cup hoisin sauce

1 tablespoon peanut butter

1 tablespoon lime juice

1 teaspoon soy sauce

Water to thin (as needed)

Instructions
 

Prepare the Ingredients: Start by cooking the vermicelli noodles according to package instructions. Once cooked, drain and let cool. Prepare all fresh vegetables and herbs by washing and slicing them as indicated.

    Make the Dipping Sauce: In a small bowl, whisk together hoisin sauce, peanut butter, lime juice, and soy sauce. Add water gradually until you reach your desired consistency. Adjust sweetness or tanginess to taste, then set aside.

      Soften Rice Paper Wrappers: Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until it becomes soft and pliable. Remove carefully and place it on a clean, flat surface.

        Fill the Rolls: On the bottom third of the softened rice paper, arrange a small amount of vermicelli noodles, a few pieces of shrimp (or tofu), a sprinkle of shredded carrots, slices of cucumber, bell pepper, some avocado, and a few basil and mint leaves. Make sure not to overfill!

          Roll It Up: Fold the sides of the rice paper over the filling, then roll it away from you, tucking the filling in tightly as you go. Repeat this process with the remaining wrappers and fillings.

            Chill and Serve: Place the finished rice paper rolls on a serving platter. Optionally, you can cover them with a damp cloth to keep them from drying out. Chill in the refrigerator for about 15-30 minutes before serving for a refreshingly cool bite.
