8 oz spaghetti or your favorite pasta

1 medium lemon (zest and juice)

3 tablespoons extra virgin olive oil

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup fresh basil leaves, torn

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

Salt and pepper to taste

Optional: red pepper flakes for a kick

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and rinse with cold water to stop cooking. Set aside.

    Make the Dressing: In a small bowl, whisk together the lemon juice, lemon zest, extra virgin olive oil, minced garlic, salt, and pepper to taste. If you like some heat, add a pinch of red pepper flakes.

      Combine Ingredients: In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumber, and fresh basil.
