Ingredients

4 large ears of fresh corn, husked

2 tablespoons olive oil

1 teaspoon chili powder

1/2 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon salt (or to taste)

Zest of 1 lime

Juice of 1 lime

1/4 cup crumbled Feta cheese or Cotija cheese

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions

Prep the Corn: Start by husking the corn and removing all the silk strands. Rinse the ears under cold water and pat them dry with a kitchen towel.

Make the Seasoning Mixture: In a small bowl, whisk together the olive oil, chili powder, smoked paprika, garlic powder, salt, lime zest, and lime juice until well combined.

Coat the Corn: Place the corn in a large bowl or on a cutting board. Drizzle the seasoning mixture over the ears of corn, making sure to coat them evenly. You can use a brush or your hands to spread the mixture thoroughly.

Preheat the Grill: Preheat your grill to medium-high heat (about 400-450°F or 200-230°C).

Grill the Corn: Once the grill is hot, place the seasoned corn directly on the grates. Grill for about 10-15 minutes, turning occasionally, until the corn is tender and has grill marks. You want it to be slightly charred for that smoky flavor.

Garnish and Serve: After removing the corn from the grill, sprinkle it with crumbled Feta or Cotija cheese, and top with freshly chopped cilantro. Serve immediately with lime wedges on the side for extra zest.
