Chili Lime Chicken with Avocado Salsa

For the Chili Lime Chicken:

4 boneless, skinless chicken breasts

1/4 cup fresh lime juice (about 2 limes)

2 tablespoons olive oil

2 tablespoons honey

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

For the Avocado Salsa:

2 ripe avocados, diced

1 medium tomato, diced

1/4 red onion, finely chopped

1 small jalapeño, seeded and minced (optional)

1/4 cup fresh cilantro, chopped

2 tablespoons lime juice (about 1 lime)

Salt and pepper to taste

Marinate the Chicken:

    In a medium bowl, whisk together lime juice, olive oil, honey, chili powder, cumin, garlic powder, smoked paprika, salt, and pepper. Add the chicken breasts, ensuring they are well-coated. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for enhanced flavor.

      Prepare the Avocado Salsa:

        While the chicken is marinating, prepare the avocado salsa. In a mixing bowl, combine diced avocados, tomato, red onion, jalapeño (if using), cilantro, and lime juice. Gently stir to combine, then season with salt and pepper to taste. Set aside to let the flavors meld.

          Cook the Chicken:

            Heat a grill pan or outdoor grill over medium-high heat. Remove the chicken from the marinade, allowing any excess to drip off. Grill the chicken for 6-7 minutes per side until the internal temperature reaches 165°F (75°C) and the chicken has nice grill marks. Remove from the grill and let rest for a few minutes before slicing.
