Chicken breast: 1 pound, cooked and shredded

Mushrooms: 8 ounces, sliced (button or cremini)

Fresh spinach: 4 cups, chopped

Ricotta cheese: 15 ounces

Mozzarella cheese: 2 cups, shredded

Parmesan cheese: 1 cup, grated

Garlic: 4 cloves, minced

Onion: 1 medium, diced

Olive oil: 2 tablespoons

Chicken broth: 1 cup

Italian seasoning: 1 teaspoon

Salt and pepper: to taste

Fresh basil or parsley: for garnish

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sauté for about 2-3 minutes until translucent. Add the sliced mushrooms and cook until they become soft, about 5-7 minutes.

      Combine Filling: In the skillet, add the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and stir in the shredded chicken, Italian seasoning, salt, and pepper. Set aside.

        Prepare Ricotta Mixture: In a mixing bowl, combine ricotta cheese, half of the grated Parmesan, salt, and pepper. Mix until well blended.

          Layer the Lasagna:

            - 1st Layer: Spread a thin layer of chicken broth on the bottom of a baking dish. Layer 3-4 lasagna noodles over the broth.

              - 2nd Layer: Spoon half of the chicken, mushroom, and spinach mixture over the noodles. Sprinkle a portion of shredded mozzarella on top.

                - 3rd Layer: Spread half of the ricotta mixture over the mozzarella. Repeat the layering process with noodles, the remaining chicken mixture, another layer of mozzarella, and the remaining ricotta. Finish with a final layer of noodles.

                  Final Toppings: Pour the remaining chicken broth evenly over the lasagna. Top with the remaining mozzarella and Parmesan cheese.

                    Bake the Lasagna: Cover the baking dish with aluminum foil (to prevent sticking, you can spray the foil with cooking spray). Bake for 25 minutes, then remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.

                      Let it Rest: Remove the lasagna from the oven and let it rest for at least 10-15 minutes before slicing. This will help it set properly.
